Writers Tears Ice Wine Cask Finish

A Walsh Whiskey collaboration with Inniskillin Winery in Niagara, Ontario, Canada’s leading producer of Ice Wine. The limited-edition release of 3,500 bottles is a triple-distilled vatting of Single Pot Still and Single Malt whiskeys which has been finished for an additional 12 months in Ice Wine hogsheads, before being bottled at 46% ABV. RRP €70.

Omar Fitzell Notes

Nose

A nose of “more”. Sugar covered fleshy peach. Green apples, vanilla and a very slight cut grass note. 

Palate

Oily and mouth coating. Heaps of caramel, orchard fruits, hint of mango and even a touch of pineapple. Very obvious sugared almond nutty note.

Finish

Long. Black pepper spice gives a slight drying to the mouth. A lovely mandarin note lingers.

Overall

Tremendous and very much recommended. I’m intrigued by Ice Wine!

 

Al Higgins notes

Nose

Pronounced tropical fruits, exotic flowers, honeysuckle, apricots, red apples and peach jam.

Palate

Mouth-filling, juicy and vibrantly fruity. Peach, apricot, white grape, white pepper, mango and pineapple flavours with just a hint of grainy vanilla.

Finish

Cinnamon, fruit syrup and dried apricots. Good length.

Overall

What’s not to like about this? Some impressive levels of fruitiness with that mouth coating syrupiness. Worth seeking out before they all go. It seems Ice wine casks are a great match for Irish whiskey.
