Dunville’s James Fox Palo Cortado Cask
A collaboration with James J. Fox to release the latest in the Dunville’s single casks bottling series. This 20 year old Single Malt has been finished in a single Palo Cortado sherry cask for 3 years and 9 months. Bottled at cask strength (54.1% ABV) and limited to just 323 bottles. Available exclusively from James J. Fox and retailing at €320.

Christmas by the fire is the familiarity that hits me immediately. Cinnamon spice. Berries. Christmas cake. Apple pie. Milk chocolate. Then comes the tropical fruit and leather.
Mouth filling, this delivers a great punch. Grape skins and stewed apples lead off with a nutty note in the background. Blackberries, plums, figs and raisins all bring that Christmassy nose into balance with the palate.
A medium to long finish with a short chilli spice that’s overtaken by green apples, almonds and a touch of peppermint.
An exceptionally well-balanced whiskey that has all the characteristics I love. Simply put, “More”. I want more.

Fruit concentrate, grape syrup, sultanas, dates, wood sap, dried apricots, exotic woods, spice, walnuts. Shows great promise.
Syrupy and concentrated with lots of body and some nice juiciness. A complex mix of flavours including all kinds of tropical fruits, dried dates, sultanas, wild strawberry jam, some sort of fancy mocha coffee, pecan pie and caramel toffees.
Long, concentrated and fruity, becoming more spicy and oaky with touches of charred exotic woods.
The quality of the cask is outstanding. This is pretty close to perfect. I am a sucker for Palo Cortado casks and I wouldn’t hesitate to try this again. The huge popularity of these sherry cask releases is well deserved.
