Dingle Pot Still Batch 1

The first Single Pot Still release outside of Irish Distillers for many years, this 50% malted, 50% unmalted triple distilled Pot Still is matured exclusively in Pedro Ximenez casks. Bottled at 46.5% ABV. RRP €90.

Greg Dillon Notes


Spicy, herbaceous; thyme, rosemary and pine needles immediately spring to mind, those herbal notes give
an aromatic quality that teases and intrigues the nose in equal measures, with a slight caramel note given time in the glass.


Again, packed with herbal notes akin to the nose, bit
more fiery on the palate with a raft of spices singing through too; cayenne pepper, white pepper and a sweet, juicy note reminiscent of toffee apples.


Quite a long, spicy finish that gradually ebbs away leaving a slight menthol note on the back palate.



A very interesting take on Single Pot Still Irish whiskey, more herbal than I would have expected, but a great, well-balanced example of what Single Pot Still can produce. Superb.


Michael Foggarty Notes


Big pronounced fruit, lashings of PX sherry. I could be in a tapas bar in southern Spain.


Spicy. Dried stone fruits give way to some creamy vanilla and brandy butter. For one so young it should be a school with the big kids.


The fruits linger on, a very lasting finish


The number of distilleries in Ireland bottling pot still has
doubled and going by this stunning whiskey let’s hope Dingle and other distilleries around the country start releasing more.
