The Dead Rabbit
A collaboration between world-renowned Irish Whiskey Master Distiller Darryl McNally of The Dublin Liberties Distillery and Sean Muldoon and Jack McGarry, co-founders of the award-winning Dead Rabbit Grocery Grog bar. The 44% ABV whiskey is a unique blend of aged Irish single malt and grain whiskeys, aged in seasoned Kentucky bourbon casks for five years before being finished in specially crafted, virgin American oak barrels. Greg Dillon Notes
Nose:
bunch of maverick, and legendary bartenders.
Palate:
Palate is all about smoke and vanilla, watermelon notes that were a little confusing but thoroughly enjoyable. Pencil shaving notes too to tell me there is some fresh
oak in here, as all as a juicy, oaky mouthfeel and a hint of roasted coffee too. Fantastic palate with a lot of spice too
Finish:
Medium to long finish with cayenne and white pepper notes fighting it out, vanilla throughout still and a beautifully balanced character.
Overall:
A really well put together whiskey, I thoroughly enjoyed it; from the characterful yet calm nose, to the palate full of flavour, layers and texture, this is a great whiskey
– especially for the price!

Fresh bourbon, lashings of clotted cream and toffee. Classic bourbon maturation.

For a young whiskey it stand up quite well. Re-casked in American virgin oak has done the trick here. A decent blend but slightly pricey. I’m sure if you visit the Dead
Rabbit in New York you will get some stonking cocktails made with this.
