A Whiskey Inspired by the Creator of Irish Coffee and a Collaboration Between Limerick and Dingle

 

The Limerick Spirit Company proudly announces the release of its latest limited-edition whiskey under the Thomond Gate – Joe Sheridan – Dick Mack’s Coffee Stout Finish Single Malt.

This one-of-a-kind release honours Joe Sheridan, the Irish chef who created the original Irish Coffee in 1943 at the Foynes flying boat terminal, just outside Limerick. On a cold winter’s evening, Sheridan famously added Irish whiskey to passengers’ coffee to warm their spirits—giving birth to a drink now loved around the world.

Inspired by this act of Irish ingenuity, the whiskey is the result of a collaboration between the Limerick Spirit Company and Dick Mack’s Brewhouse in Dingle, County Kerry. In January 2020, a bourbon cask was filled with rich coffee stout at Dick Mack’s. After 16 months of seasoning, the cask was sent to Limerick, where it was then sent on for filled with a Single Malt distilled at Great Northern Distillery on 6 March 2017, originally matured in ex-bourbon barrels. The whiskey was finished in the stout cask for over three years and bottled on 8 December 2024 at 55.8% ABV.

The result is a deep, full-bodied whiskey with layers of roasted coffee, dark chocolate, toasted oak, treacle, and warm baking spice—evoking the flavours of an Irish Coffee while telling its own story through cask and collaboration.

Joe Sheridan – Coffee Stout Finish Single Malt made its debut at Cork Whiskey Fest 2025, where it received a hugely positive response from the Irish whiskey community for its depth, originality, and storytelling. This is a true one-off bottling, shaped by a unique cask and collaboration, and is unlikely to be repeated.

 

Official Tasting Notes

Appearance
Clear with deep intensity and an amber colour, reflecting extended oak maturation and stout cask influence.

Nose
Pronounced aromas of roasted coffee, dark chocolate, malted barley, vanilla, fig, and prune, with underlying notes of toasted wood and leather.

Palate
Dry, full-bodied and smooth with high, well-integrated alcohol. Pronounced flavours of espresso, cocoa, toasted oak, treacle, clove, and nutmeg.

Finish
Long and very complex, with persistent notes of roasted coffee, baking spice, and dried fruit.
