The Palace Bar Dublin launches exclusive Redbreast 25-year-old Single Cask Whiskey
Whiskey enthusiasts from all over Ireland gathered in Dublin for the launch of a very special bottling for The Palace Bar, one of Ireland’s most loved pubs. The night started off in Bill Aherne’s bar, located just around the corner from The Palace Bar. Having been acquired recently, Bill Aherne’s bar has undergone an impressive refurbishment while maintaining a traditional style similar to The Palace Bar. Following a cocktail and a whiskey (Redbreast Lustau) from one of the six cask taps, everyone made their way to the Palace Bar upstairs.
With a room full of enthusiasts and anticipation, Willie Aherne welcomed all guests and spoke about the history of the Palace Bar and having unique single cask releases. He introduced Master Blender David McCabe who shared how he came into his current role and with 6 samples set out for each guest, David took us through each sample sharing how they were produced and his tasting notes on each.

One of Dublin city’s oldest and most treasured pubs, The Palace Bar on Fleet Street is proud to launch a 25 year old single cask Redbreast Irish Whiskey. Bottled at cask strength, this extraordinary single pot still release was aged exclusively in one ex oloroso sherry barrel. It’s age and unique maturation, marks it as one of the rarest Redbreast single cask bottlings on the Irish whiskey market right now.
David McCabe, Master Blender at Midleton Distillery – home of Redbreast, worked closely with Willie Aherne of The Palace Bar in hand selecting the cask. After a quarter century of ageing, it yielded just 507 bottles at 57.6% ABV. Bottles can be bought for €770 and, as a special promotion until the end of June, flights of Redbreast at The Palace Bar will be available for €85 that showcase their Redbreast 25 Year Old Cask Strength, Redbreast 17 Year Old Cask Strength and Redbreast 12 Year Old Cask Strength.

“For over 200 years now, The Palace Bar on Fleet Street has been at the centre of Dublin city hospitality and more recently, it has also become home to a stellar Irish whiskey collection. Having celebrated our own 200th Anniversary of distillery tradition at Midleton last year, I consider it a great honour to have worked with The Palace Bar owner Willie Aherne in choosing a one- of- a- kind Redbreast that his customers from all over the world can now enjoy.”

Nose
Initial hits of dark fruits, dates and figs with rich notes of wood, leather and freshly roasted coffee beans. The soft pot still spices build over time accompanied by mild nutty undertones and dark chocolate.
Taste
Rich in spices with soft oak tannins to the fore, while hints of vanilla and soft dried fruits evolve, working in tandem with woodland spices of cinnamon and freshly grated nutmeg.
Finish
Rich and lingering with the pot still spices first to slowly fade, allowing the oloroso seasoned oak to have the final say.
