Speaking about the collaborations with Roe & Co Distillery, Nico said:

My love for cooking was inspired by my Grandmother – the queen of soul food. She taught me not only about depth of flavours but about the variety and playfulness of spice that you can have in Caribbean cooking. I can’t wait for people to try my food at D-8TE. A great treat to close out the summer!’.

Nico brings an energy to his cooking that is not to be missed, nor are his Cuban mojo pork patacones, slow cooked pork shoulder with spiced black pudding over crispy fried plantain using his granny’s secret sauce. You can also expect to see – Jerk chicken with okra, Dublin Bay Ceviche and Caramelised plantain with coconut and Roe & Co custard – on the menu.
