Ken Komatsu’s Matsu Ramen
Speaking about Matsu Ramen popping up at the Roe & Co Cocktail Village, chef Ken said:
‘It is a real privilege for me to be able to bring a real taste of Japan to D-8TE. I am very passionate about my dishes and am excited to see people enjoy them. Ramen is my favourite dish as when it’s done right, it’s like food for the soul.’
In addition to Ken’s flavour bomb Tonkotsu Shoyu Ramen, diners can expect to enjoy dishes like Karaage Gushi, Japanese style fried chicken skewer in teriyaki mayonnaise; fresh Nigiri Sushi Moriawase, Tuna with cured egg yolk, Hamachi ponzu lime, Aburi Salmon miso; and Matcha Tiramisu with white chocolate mousse and seasonal fruit.

Finally, to close out the summer, Nico Reynold’s Lil Portie will take over D-8TE’s centre stage on from Thursday, 19th August to Sunday 22nd, and Thursday 26th to Sunday 29th August, serving his much-loved Caribbean menu with a Latin twist, using plenty of locally sourced Irish ingredients.

Nico Reynolds – Lil Portie
Speaking about the collaborations with Roe & Co Distillery, Nico said:
‘My love for cooking was inspired by my Grandmother – the queen of soul food. She taught me not only about depth of flavours but about the variety and playfulness of spice that you can have in Caribbean cooking. I can’t wait for people to try my food at D-8TE. A great treat to close out the summer!’.
Nico brings an energy to his cooking that is not to be missed, nor are his Cuban mojo pork patacones, slow cooked pork shoulder with spiced black pudding over crispy fried plantain using his granny’s secret sauce. You can also expect to see – Jerk chicken with okra, Dublin Bay Ceviche and Caramelised plantain with coconut and Roe & Co custard – on the menu.
